I made w/o emulsion where the internal phase is 25% and the external phase 75% . The internal phase contain ammonium phosphate 6 g in 20 ml water and the external phase is 60 ml organic oil with 2 g emulsifier type w/o emulsifier . I mixed it well at high speeds for half an hour and at small speeds for 3 hours.. it was stable and good but in the next day a precipitate form at the bottom.. why was that? Was it ammonium phosphate that deposit? And why?

You do not write about the pH and structure of the emulsifier. Ammonium phosphate can be hydrolyzed to produce ammonia. Over time, it will go into the environment, and an emulsifier with a phosphate ion can form an insoluble compound. The exact details of your system are needed.

Dear sir professor Yuri.. Thanks a lot for your reply.. the emulsifier is lanolin.. its structure in the attached image and PH value was neutral between 7 -7.5 was it the reason? Was there anything wrong in my work?

Apparently, acid phosphate was selected, and (NH4) 3PO4 in the precipitate. Compare their solubility.
would assume that the lanolin (wool fat) is partly hydrolyzed and a kind of waxy material is precipitated. Also 'organic oil' may be a vegetable oil with very complex composition. If you work with very complex materials there is much room for guesses and sophisticated analytics are needed to get more reliable information.

In fact I used sunflower oil as the organic phase.. Is it the reason? It is better to use a more viscosity oil like mineral oil?
if you use a chemically more defined oil, like paraffin oil you can exclude one potential cause of formation of a precipitate. If it is still observed, it should be related to the complex emulsifier.
