Could u please help me to identify which type of emulsifier could add to the coating substance instead of sunflower oil???
im trying to add additives to create good characteristic of coating such as plasticize and emulsifier
the coating that use is the extraction from the Gum Arabic substance
There are a number of things you might do, but having worked for awhile with a surfactants company, they make it their job to solve customer problems exactly like this.
I suggest you contact one such as Rhone-Poulenc, Witco, or Huntsman chem. Any of them would be happy to help and send you free samples.

I know an alternative, for Gum Arabic, which is a combination of uniform sodium alginate particles " prepared by premix membrane emulsification" & chitosan as coating for them. The resulting emulsifier has very little toxicity "unfortunately" but it will stabilize the oil-in-water emulsion.
Research is required to get rid of this slight toxicity.
