Without doing any test except the blood test, how many parameters can be evaluated with acceptable and reliable outputs?

You have to be much more specific in your question, to enable people to give a meaningful answer.
In principle there will be (probably) hundreds of possible tests available assuming that you have sufficient money and manpower available.
My first question would be: To which aim would you do these tests?
Health care (preventive or curative?)?
Performance (prediction?)
Stress indicators?
Residue information
etc etc etc.
The answers will be probably different for all categories; so you have set yourself a huge task

You are right. actually I meant broiler performance and stress evaluating with blood test.
I have no idea about blood tests that might be a good indicator for performance of broilers, as it is not my field of expertise.
Measuring stress might be quite complicated, as it might be quite difficult to distinguish between the stress induced by catching the animal and taking the blood sample and other possible causes.
I remember that my late colleague Gerard Beuving, took a lot of precautions and used tricks to be sure, that when he took the blood samples of laying hens to measure corticosteroids as an indicator of stress, that the hens were not aware of his presence or him taking the blood sample.
