I think the extracts are free from chloroform or ethyl acetate (did you evaporate the extracts to get the crude products? if not do a rota-evaporation and use the crude product). For the insolubility issue, you can use some emulsifiers like, tween 20, 60, 80 and gum acacia, but make sure these emulsifiers are sterile (you can autoclave a 10x solution of the emulsifiers and if needed filter them through 0.2 microne filter.
