I think most important compound in aloe vera is water soluble high molecular weight polysaccharide. Which gives aloe vera its characteristic viscous nature. After certain concentration of the soluble solids it can also show gel like characteristics.

Yes there are polysaccharides like mannose-6, heptose, acemannan biological active compound. But question is how to extract particular component to use in cosmetics rather than whole aloe vera gel.
