The maximum recommended pressure is 40N/mm2, so for 800 N you would need 20 mm2. Frequency is of no importance. The best would be a multilayer stack as used in diesel injectors.

No, discs are monolayers. Stacks are multilayers, built of square "bricks" for instance 5 x 5 x 2 mm on top of each other, with layers of 20, 40, 60, 80 or 100 um. You have not told what voltage you need. Multilayers give a lower voltage and higher current than monolayers, which is usual what you want. But multilayers are very difficult to obtain.

The charge coming from an accelerometer or infrasound sensor have to be amplified, whereas an energy harvester can charge a battery.

It is not, always, true[1].

Also, most cases apply amplification for other issues. The main question is:

I hope you are doing well. I suggest if you want piezoelectric material in form of discs , rectangular shape you can buy PZT 5A, PZT- 5H, If you can coat some material than you can go for PVDF. But, T present it would be difficult to get Piezoelectric materials.

You have to use the piezolelctric materials produced for commertial piezo electric generators. There are two types of piezoelectric materials the glass materials and the ceramic materials. Normally the commertial piezo generator are made of ceramics.
