I need to place an order but i don't want to order the wrong product, since is the first time I approach to this kind of experiment. After some research I found two products that could be suitable for my aim.

In your opinion, which of these two products is the best?
Or is it basically about the same product but simply from two different producers (EMD Millipore and Sigma)?

You need to use modified trypsin that has methylated lysine in its sequence. This trypsin has very small degree of autolytic peptides and is therefore very efficient in digesting the substrates. Promega modified trypsin or Trypsin Gold, as suggested by Alberto above, are good choices.
Other sources of trypsin may be cheaper but since they are not modified, will be less efficient.

we usually use Trypsin Gold from Promega. It is several years we use it and we found it highly reliable. I think also Sigma will work well.

I would not use none of those two that you pointed above.
According to Hediye´s answer above, you should look for the following product from Sigma:

I have used that (T6567, dimethilated, proteomics grade) and also sequencing grade modified cat V5111 from Promega. Both work fine and properly for digestion before MS purposes.

We use trypsin from Sigma (as indicated in AOB 88 (2018) 10-18 or BBRC 175 (1991), 1070-1075). As suggested by Alberto Vitali, sources of trypsin from Promega also work fine.
We use sequence grade modified trypsin from Promega (V5111). its very reliable. Works nicely in a proportion of 100 - 200 (µg of protein):1(µg of trypsin).
