There are two ways explained below.
1. Testing sub models using all goodness of fit values (chi2/df, NFI, CFI, RMSEA etc)
2. Using direct and indirect effect analysis showing that mediation is required to improve the performance of model.

Your question seems in-keeping with the fact that Mackinnon et al (2002) noted 14 ways of testing hypotheses of mediation and Hayes (2009) noted 4. I'd start with the Hayes paper myself (references below).
Referring to Hayes (2009), your suggestion (1) seems in keeping within the initial methods proposed to test hypotheses of mediaiton: the causal steps approach of Baron and Kenny (1986) and the Sobel Test (Sobel, 1982). Your second suggestion seems in keeping with the bootstrapping approach that I believe AMOS uses.
I would go with your option 2 myself. I've also heard that the notions of "full" and "partial" mediation are dying-out (as they originated in the causal-steps and sobel test approaches) in favour of notion of "indirect effects". I couldn't give you a reference for this though.
