I am searching for a tool to use FMI both for Co-simulation and Model Exchange. As the first contact, I would to have a more flexible tool possible, which runs in diverse platforms (Linux, OSX, and Windows) and with a relative active community, for in case of doubts. Which one do you recommend?

few months back I needed a software for a similar project and I found a great one
https://www.scilab.org SciLab, works under Windows, MacOS and Linux (it should work under BSD also if you comple from code, the software is C, C++).
I personally used it under MacOS and Linux Fedora worked great, cannot say anything about the windows version, out of windows world for 10years.
Regarding the community I cannot say if it was active or not never needed help, since the tutorials are very detailed and well written https://www.scilab.org/about/community
I would personally recommend using SciLab on Linux, since I compared performance on a similar program written c,c ++ https://www.gnu.org/software/octave/ working with similar tasks and processes.
Linux was much much faster and almost zero crashes.
