Which condition should I use to find Molecular weight of chitin (Mn and Mw) and its polydispersity index using GPC? or maybe Mv calculated from viscosity using rheometer.

You could try dissolving in acetic acid, with light shaking for 24h. There is an application note showing results from GPC on the Malvern site, link attached.
To get the polydispersity index PDI, light scattering is probably the best method, via PDI=Mw/Mn
