You must use a column to separate the sugars and polyols (calcium column) and a specific column to separate organic acids. The mobile phase is degassed pure water. To detect and annalyser your solutions, if these solutions are concentrated you can use a refractometer.

Organic acid can be detected easily in C18 column and mobile phase having pH around 4 to 4.5. But sugar might difficult to record by UV detector. 

Firstly, record the UV spectra of the sugars and determine the wavelength maxima. If it is absorbing at wavelength above 215 nm than you can definitely go further. Else you need to derivatize. Rest, you have sufficient resources for the separation and quantification.
