I have a student that I am supervising who needs some type of open data set for analyzing using Structural Equation Modeling. It would need to be data from which latent variables/ constructs such as e.g. trait anxiety can be created. So, questionnaires and surveys are ideal for that.

It may prove very difficult to obtain such secondary data that contain the indicated latent variables for structural equation modeling (SEM). This is partly because SEM usually requires bespoke Hypotheses and associated data. Of course, you may know this already.
However, one way to obtain open access data for SEM is to check and search Elsevier Journals that publish papers in your line of research. It may be appropriate to identify the Journals and search for SEM or "structural equation modeling" papers in the Title/Keyword/Abstract functions of Scopus or Web of Science and filter your specific Journals.
The use is Elsevier is recommended because their Journals often request authors to upload the data or methodx and I have seen some SEM data uploaded as well and free to access.
If you're competent in big data analytics and machine learning, you may simply mine such data in the Journals without using the laborious manual approach I recommended.
