I have a project related to an oil platform. I need to do material balance, energy balance and so on. Now I need viscosity and densities of some fluids, only 2 of them are rest :( sand and light oil

For fluid properties the best book to consult is called "Petroleum Fluids" by Bill McCain.

Since you are only trying to do material balance and I am assuming you are looking at fields in famous region (eg. North Sea) then I would suggest you use correlations. North Sea correlations for viscosity can be found in any book of petroleum fluids: I would recommend Tarik Ahmed Reservoir Engineering Handbook of course after you have a look at the best book in fluids written by McCain as Rosalind mentioned.
