In papers, sometimes authors talk about something (for example correlation between two variables) and then in brackets it says "e.g." or "see" followed by the number of citations. What is the correct use of each? What is the difference between them?

As to me, I think "see" is being used when an author argues or describes something, let's say about the methodology of the research, and in order to save time and space indicates reliable sources where similar methodologies have been applied. For example, I am an author and I apply Spearman's Rank Coefficient correlation and I indicate it as follows: This paper employs Spearman's Rank Coefficient to determine the relationship between oil prices and output gap (see Antonov, 2018; Mironov, 2020; Mammedov, 1995 for alike methodologies).
About e.g. As far as I can understand, scholars use it when they point to the specific things without any need for further detailed explanations. Again, I would like to give an example (an imaginary sentence from imaginary paper): The significant connections between oil prices and economic variables (e.g. non-resource production, tertiary sectors, human capital and etc.) are usual expectations among the resource-rich countries. So, in this case the author needs just to point to the specific terms, variables and etc. and does not need to create a possibility for the reader to explore things on his/her own if there is a need (in contrast to the case of "see").

Very good question this, since I just finished editing an 'edited collection' 🙂
I personally use (see, X, Y, Z) to direct the reader to pertinent sources that relate directly to that paragraph / sentence / concept.
I find that I use (e.g., A, B, C) less, preferring to list out A, B, C as examples in a proper sentence. So, perhaps it's more about style than convention. Cheers!
