The concern is not only for the amount of time the family and the research staff are burdened with, but I'm sure there could there be a burden effect that would influence the data at the point where the families are tired. When working with multiple disciplines on large collaborations, we all want to collect relevant data to make the study more dynamic, but at what point does that become too burdensome to the families who are willing to participate?
You may visit a family twice or thrice or shorten your interview scheduled as much as possible, it is impossible to get all required data in a go. I am of the view young researchers are very ambitious and attempt to collect all possible data even remotely concerned with the problem. In a sense it is good from the viewpoint of scientist method, but the experts may design a shorter and effective interview scheduled that serves the same objectives of the research problem.
Please don't feel offended, the term young researcher is not meant for you, it my general observation.
Depends on the type of data and who is collecting the data, numbers of families are too talkative and waste times, so the concern person has to limit to the problem concern and this depends on the experence of the person collecting the data

You might also want to consider the compensation. If you spend a substantial amount of time with them, it is important to be compensate them accordingly. In several of the national surveys, interviewers were at individuals' homes for hours sometimes (This is based on earlier versions of these types of surveys; I can't speak to the more recent surveys they use). With the increase in computer administered surveys, families might actually expect you to administer part of it online and thus expect you to spend little time at their home.
