I have no idea about sugar clarification but assume that it is an aqueous process. If so, when MgO is exposed to water it will form a Mg(OH)2 surface layer onto MgO and possibly release some hydrogen. In this process Mg cation vacancies are introduced in the material which might affect the catalytic properties.
