I need a fast way to do it, and I've been looking at some protocols where people use other components.. And also they use an ultrasonicator (which my lab doesn't have..) So I looked up a "homemade" protocol and found some interesting things like the "Vitamin C encapsulation" But I'm not sure if I can replicate this with the SLSA.

An interesting protocol, considering that you don't have an ultrasonicator, is preparing the lipid film, hydrate it with a suspension in a defined concentration of your enzyme, and making sequential extrusions in PVDF membranes (450 nm, 220 nm, 100 nm, etc - I suggest you using Milipore membranes) - at least 10 times for each membrane.
If you have access to a sonic water bath, although this is not the preferred method, you can try using it for reducing the size of liposomes. Sonicators are an excellent tool, but are not sine qua non for liposome perparation.
