For my research I tried extracting PAHs from waxes using DMSO and DMF, however I want to know what the difference is between those 2 solvents? is there a difference in polarity? does one have more affinity for aromatics? for now it seems that DMF works better than DMSO but I want to know why, on a chemical property level.
DMSO - dimethyl sulfide - (CH3)2S=O, as the name imply - it has two methyl groups attached to sulfur oxide (S=O).
DMF- is N,N-dimethyl for amide - i (CH3)2N-C(=O)H- t has two methyl groups attached to nitrogen atom that is attached to a formyl group (C(=O)H.
Beside the chemical and structural differences there is significant differences in term of their protophilic character, i.e. acid base character , polarity, and other physical properties.

Polycyclic aromatic hydrocarbons (PAHs) are nonpolar and lipophilic. Larger PAHs are generally insoluble in water, while some PAH's are soluble.
DMSO - is more polar than DMF, because of lower polarity of DMF PAHs will dissolve.(like dissolve like).

Based on polarity index, DMSO and DMF have values of 7.2 and 6.4 respectively. Hence, they have comparable polarity with DMSO slightly higher than DMF. Since PAHs are nonpolar, they would be expected to dissolve more in DMF relative to DMSO but safety measures should be taken while handling DMF as it is a carcinogen associated with liver diseases and reproductive problems unlike DMSO.

Both the solvents DMSO & DMF are aprotic . DMSO (dielectric constant =49) is more polar solvent than DMF, (dielectric constant = 37). DMSO has S=O bond with two methyl groups attached to sulphur. DMF contains C=O with dimethylamino group and hydrogen attached to carbonyl carbon.
