This is a good discussion Debra Sharon Ferdinand-James . Even though some of these tools already existed, they were not yet widely used and explored considering that most courses were developed in person. I think the possibility of recording remote meetings so that students can recover and watch again has been very useful. But also the holding of synchronous sessions with the support of video conferences has enabled the participation of people from different places, which has enriched the educational experience at this time. And that may be incorporated in the future.
I will recommend also Moodle as LMS, but with support of some other tools, for example Google Meet or Hangouts Meet app (Android), Big Blue Button. Next, recording lectures (with Screencast-O-Matic) and sharing them on youtube is fine approach as well...
I work for a team of specialist speech and language teachers - we have used: -Bramble - good because records session and sends to both tutor and pupil - good mix of screen teaching and notebook format
Microsoft teams - better for bigger groups and if have two screens - easier to share powerpoints
Zoom - good if only want face to face meetings, larger groups
google meet - good size screen for diff participants but not good to share docs
We put together the Higher Ed Learning Collective on Facebook and rhe wealth of information shared is an incredible tool to answer any pedagogical challenge. Additionally, I have found adapting Seesaw digital portfolios very useful as well as having texting groups with students for informal and encouraging conversations amidst such hard times.
I have no experience with experience with Flipgrid - a social learning for PreK to PhD learners ... and beyond, but somehow it seems very interesting to explore...
I use Moodle as e-learning platform with BigBueButton for the virtual classrooms with my students (formal learning/teaching). Also, I use Zoom for the supervision of my PhD and master students.
Jamboard is a great tool for engagement. Also, Kahoot can be a great ally to make classes more dynamic. Breakout rooms in zoom can be really useful too, this feature allows you to break the group in smaller groups so they can work in assessments in class.

Zoom has been very useful for my lectures with PhD and master's students. I also use Google forms for Multiple Choice Questions (MCQ) where students respond within a given time frame.
I teach in rural area so the powerful method is through whatsapp. I shared many things such as teaching's videos, audio and worksheets with my kids via their parents' whatsapp.
If you are looking for online student engagement, recorder lectures (redesign powerpoint slides), analysis of real problems through discussion boards, case studies ...the list can go on. What is more important is the creativity and imagination of the instructor to redesign student learning experience.
I use zoom for cognitive learning, but for more psychomotor subjects it must be mixed with virtual reality video game software, of course, there is no choice of the most qualified programs, each with advantages and disadvantages, we must wisely choose the model that gives the most excellent in the current learning situation.
Generally, students use PDF format to upload their assignments/answer-sheets on Google Classroom/Microsoft Team/any other learning management system.
