First of all you may calculate the mean and standard deviation/error of quantified value. Further you may perform ANOVA and correlation between polyphenols and antioxidant activity. You may also perform Principal component analysis (PCA).

For choosing the proper statistical analysis type, you have to consider the number of factors affecting your dependent variables (here: polyphenols, flavonoids, anthocyanins, and antioxidant activity). If there is only one factor, you may use One-way ANOVA, and IF there are two factors, you may use 2-way ANOVA. But be careful about the number of samples; if you have only two samples, you have to use a T-test, but if you have more than two samples (considering the control sample), you have to use ANOVA.
