I do not think the method is different than in any other businesses. Maybe if you want to choose the right functional unit, like CO2/ students successfully finished. Potentially you can calculate net carbon footprint, especially if you have dormitories, you can consider that your students would have there own carbon footprint somewhere else, maybe larger than in your community.
