I want to show evolution of hydrogen by sending the evolving gas into a solution containing Pd/C catalyst. Is there a molecule, or group of molecules that will change colour when reduced with Hydrogen in this manner, allowing easy detection?
Lower the copper plate with copper oxide on its surface. When interacting with hydrogen, dark copper oxide turns into golden-pink copper.

You probably meant that the palladium ion is reduced, not Pd
Methylene blue dye is used generally to detect molecular hydrogen in aqueous medium.
The colour of the product may differ from the substrate. Hydrogen reduction of various oxides gives a product of usually a different colour. However, I don't think it is correct to talk about changing the colour of a molecule.
