Some of them are referred to EGM96. All of them carries a model for geopotential reference. EUDEM is tailored to EVRS2000

Their raw heights are referenced to ellipsoid then they are related to MSL using EGMs?

The orthometric heights referred to MSL defined by a global geopotentional model. The final heights have an accuracy of 5-10 m wrt the heights of the MSL. But this is a long discussion

All of those DEMs, including processed InSAR DEM, are reprojected into WGS84 UTM (Zone 16 North) with post spacing of 16 meters, and the vertical datum of WGS84 ellipsoidal height in meter.
