Please I would like to know the novel treatments by chemical agents, natural compounds or microorganisms for reducing the biogenic amines in fish products .
I wouldn't know of recent methods, unless there are transgenic fishes, produced which have low concentration of such biogenic amines. However, the classical method is to treat the fish muscles with low concentrations of some suitable organic acids like citric acid along with some amount of salt and then washing it with water before making the desired product.
