Dear Mozhdeh: your questions are very general and answer them is not easy. The links from Johannes Fresner could help. But much better would be to determine which enzymes are of your interest. There is a huge difference in production techniques due to enzyme characteristics. Separation and isolation techniques are different if an enzyme is secreted extracellularly or if it is retained in cells etc. etc. Concerning bioreactors: their design depends uponb microorganisms used for enzyme production. There is huge difference in cultivation parameters according to microbes produced (e.g. bacteria, filamentous fungi, molds,...).
I agree with Dr. Vit Mateju, enzyme production in the lab, pilot plant and production plant are different from each other in spite of the fact that the biological pathway is same. If you have any specific enzyme/s and want to produce in small quantities i.e. in 5 Lit or 10 Lit fermenter, the investments is big. You need to be sure of enzyme and most importantly sales requirement and pricing. So, before putting your thoughts on enzyme production, please collect market data on pricing, market demand, major producers of those enzymes etc.
