Is there any literature about boiling retardation (superheating), where the probability of its occurrence is somehow described? e.g. that higher pressure will reduce the probability of superheating or lower the superheating temperature.

I couldn't find any clearly relevant literature but as your question have intrigued me and the study I did to find an answer; I'd like to give it a try.
As we increase the pressure we'll be having boiling retardation but as we go in super-heated zone the pressure required to retard boiling will be very high which will be hard to produce. this means as we increase the temperature the increase in pressure will not be linear instead exponential ( i guess).
the basis of my thought is that boiling starts when the vapor pressure is equal to pressure of the gas above it.
