i try yo optimize pH of my extracts that have phenolic compound but i don't know which pH is ideal to be most stable?
i read in literature that acidic media is good because phanolic compounds will be in protonated form as reverse if it in neutral and basic pH which become easily oxidized and become in unprotonated form
but how much pH in acidic ? 3, 4,5
i read the figure but i didn't have just phenolic compounds in the extracts plus i know that flavonoid is type of phenolic compounds, the paper is very useful to me.

Each phenolic alcohol has a different pKa according to the structure of the molecule and therefore a different pH is required. I suggest that you keep your pH around 4, so you have the protonated form (-OH)
