That depends on what you are interested in. To name a few there are, self-report measures: magnitude estimation, magnitude production, method of adjustment, forced choice, and Likert scale reporting. 

You can also use some behavior as a measure of perception. For example, the perception of distance is often measured by having participants walk to reproduce the distance that they viewed.

In agreement with Dr. Thomas, I would also recommend to have a look at the qualitative methods, and phenomenological design in particular, if relevant for your paradigmatic orientation.

A good starting point would be a text book on experimental psychology, such as this one: Myers & Hansen, 2012: Experimental Psychology; the introductional chapter can be found on the web for free (see attachment).

However, there are several other similar books out there.

If you are particularly interested in multisensory perception, you should check out the work of Charles Spence or Klemens Knöferle (see attachment for an example).

I may proposed the use of modified a modified SERVQUAL in measuring to tourists perception. You may look at only the perception components but it will be better if you can look at their expectations of the host communities. Thereafter you can call your modified SERVQUAL (TOURQUAL) if such does not already exist. There are a number of modified SERVQUAL in tourism eg. ECOSERVE, DINESERV. Your evolution may be the contribution to literature.

You can also use SERVPERF. However, you have to be cautious in defining "perception". There are a number of factors that can influence perception invariably tied to expectations (word of mouth, advertisement, previous experience).

In measuring opinions or perception you can use likert scale and the number should be odd so that respondents will be allowed to position themselves well in the subject or the matter. It will be unfair however, to force respondents to position themselves either positively or negatively when in actual fact they may be uncertain or assume or usurp a neutral position.
