Rochelle salt or potassium sodium tartarate is used in the DNS method to impart stability to the colour of products formed. Likewise it may serve a similar purpose here. Moreover the reduction of Cupric to cuprous by reducing sugars (that includes reducing oligosaccharides as well as monosaccharides) requires an alkaline medium that is provided by the Rochelle salt dissolved in 2.5M NaOH.
