Unless I've missed something, mutation is not commonly used to describe a protein. Genes are mutated, which when translated make proteins with potentially different amino acid composition, conformation, and activity than the original protein. I would also describe a mutation as something that is inheritable, which a change in a protein would not be passed on to the next generation if its gene wasn't the source of the change.
