There are many open source software for image processing. To my knowledge the open source QGIS with Orfeo toolbox for image analysis and Grass. Sometime you may want to work on GRID another raster SAGA is another package for GRID raster analysis.

Maybe you have a look at MeVisLab (http://www.mevislab.de, German website, but English language). It is a framework for image processing and provides all necessary modules for loading, processing (e.g. segmentation/clustering) and visualization of images. It is not totally open source, but many modules are and you can add your own modules (e.g. for your own algorithms or implementations of existing algorithms). And it is particularily well suited for batch processing (-> large image databases). The basic functions are available without a license, so you can check if it fits your needs.
