Presumably, "Mohr-Coulomb + cap" or a more advanced "Modified Cam-Clay" or similar "Granta gravel" are good enough for modeling brittle fracture of ceramics. However, it is not easy to find appropriate experimental parameters for these advanced models, that is why I would recommend pure Mohr-Coulomb.
Since the material is brittle, I believe failure (rupture) would take place when the maximum principal stress induced exceeds the ultimate stress of the material.
