I have been reading a variety in FBS concentrations in cell media ranging from 8% to 15%. Does anyone has factual reasons as to why a certain cell type needs more FBS? Does it really matter or is it just because 'we've always done it that way, and it works'?

yes indeed we made some experiences with changing FBS/FCS concentrations. Our macrophages (peritoneal and bone marrow derived) get 10% FCS in the medium for example. They can tolerate less but they are not happy with it (meaning they can sit for a shorter period of time in wells).
Vice Versa we culture MEFs with 5 % FCS/FBS and not with 10 %. Of course they live with 10 % but they proliferate quicker.
We never made really bad or dramatic observations (cell death, no response of cells ect.) but chaning medium subtances might have little consequences. As always, one should test the optimal concentration for the cell type of choice and when it works, keep going with it.

It depends on the condition of the cells and types of cells. Standard is 10% i.e. most of the cells can be grown in this condition.
