I entered the data I wanted to adjust for first in SPSS (i.e. demographic data), but I am unsure as to which coefficient data to go with because it is not displayed in the output for excluded variables
The p-value for my measured variables is different in the excluded vs. coefficient data boxes. Does SPSS not produce standardized and unstandardized coefficients after adjustment?
You should choose the coefficient table in the output of SPSS. The excluded table cannot be used in the regression analysis since the variable (s) in the excluded table is not included in the regression analysis.
I guess you are making a stepwise regression and some variables are excluded by the procedure. Since they are excluded from the model, they can not have coefficients. You can only find coefficients of those remained in the final model.
If you wish to adjust for those excluded variables too, then you should do a regression with Enter method where every variable you wish to include are included by you.
SPSS gives both standardized and unstandardized coefficients.
I chose the enter method for both models... I thought using the covariates in the first model and then my independent variables in the second model (both using enter) was how to adjust the data for covariates?
When I look at the coefficient output, it is the same as if I simply included all of the variables in a single model as independent variables

As far as I understand, you think that there are different ways of handling covariates and independent variables. No, there is one simple way to both adjust for covariates and to handle independent variables which is simply adding them together into the model.
Ok, that's what I thought and what I was originally doing... I was just confused by the literature that would refer to certain independent variables as covariates
So I can refer to it as a covariate but I'd still treat them as independent variables in the linear regression model by including them all
