I wonder what can happen to a vegetable oil (for example, olive oil or sunflower oil), if instead of bubbling it with a source rich in oxygen (for example 10% nitrogen : 90% oxygen), we bubble it with a source rich in nitrogen (for example 80% nitrogen : 20% oxygen). With a rich source of oxygen it is known that the "Criegee reaction" occurs and peroxides are released, but what can ocurr with nitrogen?
