I would like to inquire about your views/ publications on the assessment of impact of tourism on near shore fisheries.
Please, find the discussion on socio-economic and ecological factors in tourist resorts in Gormsen's (1997, p. 49) paper. However, the goal of the study is not so detailed as you expect.

We've seen some large changes in the Great Lakes fisheries over time. Those changes have has corresponding impacts on tourism. This article does a nice job of covering the changes in Lake Huron and what happened there. The upshot is a decline in Chinook Salmon that caused a loss in revenue of $11 million. Large tourism impacts are possible when there are large changes in the nearshore fisheries.

Some additional elements/ideas that perhaps you should consider in analyzing this complex relationship:
(1) Direct benefits of tourism from fisheries (in terms of provision of fresh fishing products to taverns, hotels etc.)
(2) Indirect benefits of tourism from fisheries, like the traditional "colour" of fishing villages and ports that adds to their image and attracts tourism.
(3) Direct benefits of fisheries from tourism, like rise in demand and in prices of fishing products).
(4) Diversification of fisheries like development of fishing tourism infrastructures, funding of vessel modernization and modifications to take tourists for "fishing tours" on-board coastal fishing vessels.
(5) Competition between fisheries and tourism for space in the coastal zone (both terrestrial and marine).

To elaborate on Vangelis point #4 above, there are many examples around the world of fishing boats used full or part time for (a) charter boat fishing for tourists (b) non consumptive tourism such as bird observation and whale watching. Cases to check would be Monterey, California, Mazatlan, Mexico and Saguenay inlet, Quebec, Canada.
One thing to keep in mind is the relationship between tourism and local communities in terms of resource management. I.e, the potential conflict between tourism and local communities involving the utilisation of fishing resources. If I recall some research has been done on this topic in East Africa.
In addition to what has been said, I would evaluate the impacts (either benefits/disbenefits) of tourism on:
(1) the preservation of heritage, traditiional fishing practices, and lifestyles among local fishermen; and
2) the economic benefit to local people, especially fishermen.
