While mixing of two immiscible phases , one over the other, the interface play a vital role . For example ,one of the observation is the fingering at the interface. Another is the oil properties such as inter facial tension. It will be interesting to find the physics and dynamics of the process. Could someone also put light on the possible methods and other important properties essential to know the processes clearly.

Using an appropriate surfactant (such as soap, detergents etc.) can be helpful in this case.
In some cases you can add an appropriate amount of additional common solvent (depends on the polarity of the immiscible solvents used) which can dissolve both liquids. As a rule of thumb, a polar liquid dissolves in a polar solvent and vice-versa. Finding a solvent that has intermediate polarity could be ideal in most cases.
Sometimes, heating or ultra-sonication can be helpful as well.
