Today we use Carboxymethylcellulose sodium salt as surfactant for graphite/water mixture. We are looking for new surfactants that could reduce the mixture and dissoluiton time.

Carboxymethyl cellulose is no surfactant but acts as dispersant and viscosifier.
Dissolution time you mean that of carboxymethyl cellulose?
For preparing the graphite water dispersion there are also other important points to consider, as desired degree of dispersion, solids concentration, mode of dispersion, probably absence of extensive foam formation, etc.
For first experiments you may use a few drop of a simple dish washing agent.
