The only oxidizer present in your list of chemicals is the nitrate which is reduced to nitrite (NO2-). Caustic soda will make the pH alkaline. In acid media in the presence of nitrate (e.g. nitric acid) then the copper would dissolve so it's necessary to keep an alkaline solution.
So the only plausible reactions are:
Cu + NO3- → CuO + NO2-
2Cu + NO3- → Cu2O + NO2-
