Maybe nanoindentation technique can help you to measure the elastic modulus of ceramic pellets.

Ultrasonic waves work well to measure elastic modulii.

Of course, the denser the pellet, the better the result you obtain, as the waves reflect on any surface, as the porosity will add noise to the signal.

But as the majority of the signal will be reflected on the back surface of your pellet, you should be able to precisely measure the apparent modulii of your samples. Moreover, the wave will travel several times through your sample, so you can easily identify what peak correspond to the time the wave needs to travel through the sample and back (if you have an emitter/receiver). You may also want to use this for enhanced precision, as you can also measure the time the wave takes to travel two or three times through your sample.

Dilatometric data might be transformed to mechanical ones and the static young's modulus. But, I do not know the details of theoretical and experimental concerns on such method as a non-destructive way. Some papers have been published on this measurement technique. You can easily find them.

Do you mean the static or the dynamic elastic modulus?

The static methods for measuring Young's modulus include tensile tests and flexure tests.

The most widely used technique for measuring dynamic Young's modulus is the impulse excitation of vibration technique according to the ASTM E1876-15 standard. Please note that the results obtained are only valid for isotropic materials. You must measure accurately the length, width, thickness and density (or mass) of the ceramic material being tested.

Dilatometry in the case of porous materials does not work, porous material behaves simply as bulk material

I think both nano-indentation and ultrasonic wave instruments can help you to estimate the elastic modulus of spark plasma sintered ceramics.
