There are a few literature reviews on the topic, but I think they may be already a bit old for a field such as RS. For example, chapter 21 of this book:

In the last years I have seen so many different approaches to assess post-disturbance recovery with satellite data. Just to cite one, the forest recovery index FRI = 1 / IFZ (IFZ = forest z-score). I’d recommend having a good look at many papers (at least from the last 3-4 years) from different authors and countries because the methods and data can be very different from each other, and it’s quite difficult to understand which one may work better beforehand. Especially, I’d recommend understanding the limitations/caveats of each approach.
