The IoT is becoming integrated part of infrastructure of most of the Internet and communication networks worldwide. Given the complexity and computational resource required to run software control systems, the IoT may require significant technical hardware and software enhancements. Plus, there are 24 by 7 energy supply issues that are quite challenging given the IoT and Cyber Physical Critical infrastructures reliability, safety and security requirements.
SDN is not an OpenFlow-based technology - OpenFlow is one example of a southbound interface from an SDN controller to the SDN switches. There are many other interfaces (and OpenFlow is not the most deployed!) and even the ONF that standardized OpenFlow is not considering P4 as the next generation.
SDN is indeed mainly for "elasticity", if you mean enabling rapid design of new services. It hampers scalability - like all architectures with a centralized controller rather than distributed control. It is also not inherently secure. It emphasizes consistency, but at the expense of availability. OpenFlow has built-in counters for performance monitoring, but that is not a major feature of SDN, as opposed to classical networking.
