The most used test to evualate the in vitro anti-inflammatory activity, I think it's the 15-Lipoxygenase test. I suggest you to see the articles of Bouajila et al.
Protein denaturation assays and membrane stabilization assays are frequently used to evaluate in vitro anti-inflammatory activities. Many researchers have used a minimum of three in vitro assays to evaluate the anti-inflammatory activity of herbal constituents.
