Some years back there has been quite some debate around the country-level assessments provided by FAO. Thisdebate has been surveyed by [Gabbert, S & Weikard, HP (2001) How Widespread is Undernourishment? A Critique of Measurement Methods and New Empirical Results. Food Policy 26, 209-228.]
There is an easy method to construct country food deficiency measures from Engel curves, see [Gabbert, S & Weikard, HP (2005) The Link between Poverty and Undernourishment: Uncovering a Methodological Flaw. Review of Agricultural Economics 27, 150-155.] Accounting for the insecurity aspect of "food security" is discussed in [Weikard, HP & Gabbert, S (2010) Measurement of Food Insecurity: How to Account for Risk. Journal of Hunger and Environmental Nutrition 5, 254-273.You will find further references and discussions in these papers.
Is anyone aware of other methodological pubblications (e.g. those suggested by prof. Weikard) ?
In particular understanding how to "cloppase" indicators into a single (or few) composite indexes (same approach as the gloobal food security inex kindly suggested by Dr. Tsam).
Interesting question. We at Wageningen UR are coordinating a large EU funded research project on Food security (www.foodsecure.eu). As part of this, my colleagues from ZEF and IFPRI wrote an overview paper on indicators. This might be useful for you:

Dear Fabio, Pasquale De Muro and I some years ago proposed a multidimensional food security indicator and calculated it for the rural areas of several developing countries. More recently Elisabetta Aurino has worked extensively on these indicators. The 2013 FAO State of Food Insecurity has heavily drawn on her work.
