Does anyone familiar with any image analysis software that can be used for image quantification, particles size and shape determination, image segmentation and classification by color, texture and other possible features?
Preferably an open source one and applicable in geosciences !

Open source? I'd suggest to go for OpenCV in conjunction with Python: easy to use and very capable. As OpenCV can be considered a "general use" package for image processing and analysis, it is applicable to geosciences as well.
I'd suggest to google a bit with OpenCV and the topics of your interest: you might come up with quite a number of applications already done.
AND: seraching within RG might come up with applications as well - including names of researchers in this area.

I think, Matlab R2017b will be a very good software to analyze as it's image processing tool is very powerful and you can integrate different machine learning tools. Matlab has a vast online resource which can help you a lot and of course you can integrate it with any software applications.

Matlab certainly qualifies for "applicable", but not for "open source".
Ther are some discussions Matlab vs. OpenCV and/or Python to be found on RG - including discussions about the processing speed.
To summarize: life has become harder for MathWorks :)

OpenCV+Python is a great, free mix.
MATLAB is good for research and testing out your algorithms but its performance is dismal for a production environment or doing serious processing volume.
For a commercial package, IDL (http://www.harrisgeospatial.com/SoftwareTechnology/IDL.aspx) is a very mature and well supported product.

As well as Matlab and Python that have been suggested before, ENVI and ArcGIS are also proper software for image processing, especially for geoscience point of view. However, again, I do not think they are opensource software. They are also programmable.

I recommend MATLAB: you can do everything with MATLAB. As image analysis goes, all the standard tools are in the "image processing" toolbox.
If you talk about open source software, I can offer you without hesitation QGIS that now include several other free software such GRASS, SAGA, OTB, etc. You can also look at ImageJ ...
On the other hand, for commercial software, matlab, envi, arcGIS and ecognition, etc. Matlab often has trouble processing large images. We will have to work with images of small sizes.
