Many urban economics textbooks have something on input output analysis.......almost any edition of O'Sullivan's URBAN ECONOMICS text book contains a basic discussion of input-output analysis.  You may also want to try a chapter from Alpha Chiang's old MATHEMATICAL ECONOMICS textbook.  As I recall that old book has a chapter on input-output analysis.  Good luck.

Miller and Blair's book (Input-Output Analysis: Foundations  and Extensions) is an essential reference in Input-output Analysis.  It is  an ideal introduction for both students and researchers at many levels and areas of research. I find the book by Ronald E. Miller and Peter D. Blair "Input-Output Analysis: Foundations and Extensions," Prentice Hall, Inc 1985 very good in its coverage and examples. Its not time yet to forget the classical introduction by Robert Dorfman, Paul Samuelson, and Robert Solow, "Linear Programming and Economic Analysis," MacGraw Hill, 1968. Although William Baumol's  "Economic Theory and Operations Analysis," Prentice Hall 1961 is an old book, it is precious and basic for this topic as well.

As others have pointed out, Miller and Blair is the gold standard for IO analysts. There are a couple of classics that provide a more applied treatment. I would suggest Miernyk's Elements of Input Output Analysis and Shaffer's Regional impact Models.

I think that the best and more complete is: Miller and Blair "Input-Output Analysis: Foundations and Extensions," Prentice Hall, 2009. The new edition has some good improvements.

I usually refer students to Wliiam Miernyk's old book, which is written for the lay person and then put them on to Miller and Blair (2009)--a heavily revised and expanded version of their 1985 volume, which I understand is being revised yet again.

For CGE work the book by Hosoe, Gasawa and Hashimoto (2010) is great as is a recently revised book by Cardenete, Guerra, and Sancho (2017).
