I want to prepare W/O emulsion highly stable against temperature.

The water phase should be soluble starch 20wt.% which is indeed highly viscose. After the emulsification, I want to evaporate water to get starch particles. This is why colloidal stability at high temperatures is important to me.

As to the oil phase, I prefer to use olive oil, soybean oil, sesame oil, paraffin.   

The available emulsifiers are Tween80, and Span 80.

What formulation / procedure is recommended?
