I am unsure what you are looking for. xAPI provides a semantic structure for recording the learning process. From this structures you can reproduce learning interactions for individual actors and infer their cognitive development, level of attention (if your traces allow that) and approach to learning.

When it comes to analytical approaches, then I recommend that don't limit yourself to xAPI but look further into the field of learning analytics. This is mainly because xAPI provides you the structure for your analytics but has little intrinsic functions. For one approach of using xAPI for integrating mobile learning experiences, you can have a look at my 2013 paper.

I agree with Christian Glahn that basically xAPI provides a format to capture the interactions (traces) of users in that learning that can be very diverse and heterogeneous (e.g. mobile, semiconnected). However, you also need to have "semantic" models to be able to interpret these traces.

We have applied it to serious games (e.g. educational games, educational simulations) and there you can find different uses. We have developed in cooperation with ADL an xAPI application profile to capture user interactions in these types of games.

But still you need models about how to interpret the collected information and do not create false expectatives.

We use an older ADAPT2 even reporting protocol, which is very similar to xAPI and did several studies related to data-driven individual differences. The level of detaiils afforded by this protocol enables some interesting findings.
