Sure you can. Just use the -> function to create a name for it. For example:
Covar -> (code for the covariance here). It should store the result as a matrix or as a vector for further manipulation. To check it, just examine the covar variable that was created. Use fix(Covar) to get rid of any headers that may have appeared--they shouldn't appear at all, but this will let you see what's actually going on.
