You could put out values over TCP/IP. There is a chat demo in the Arduino example code. For the PC side, there should be chat examples in any language.

Another idea from under the shower: let the PC do the conversion of numbers into ASCII characters. Send your data in binary form.

Start with increasing the baud rate to 115200 Bd, and limit any static output:

"v xx.y | a mm.n" or even "xx.y mm.n" will have to do if you vie for higher update rates.
